Awarded a Michelin star just 5 months after opening and named #95 in The World’s 50 Best Restaurant rankings in June 2023, Ceto by Chef Mauro Colagreco is inspired by Greek mythology and the water constellations of the sky and draws on one of his favourite themes, the sea. The centrepiece is an open grill, and the menu reflects the vibrant local ingredients focusing on sustainable fishing in tune with nature and seasons.
The restaurant is a forerunner in the area, having implemented an exclusive technique for preserving fish: with a maturation chamber that reveals new flavours. The reflection of the seabed radiates the place already bathed in natural light. The waves, the water, the purity of the colours and the tableware, all showcase a continuity between the sky and the sea.
This summer, Ceto completes its gastronomic offer with La Domenica X Laurent Perrier : a unique, festive and elegant experience taking place each Sunday lunch at Ceto. At lobby level, Colagreco also offers a colourful representation at The Riviera Restaurant where guests can indulge in a menu that celebrates regional specialties and flavours in their simplest form enjoyed in a magical venue bordered by uninterrupted water views. Dishes include Niçoise salad, Spaghetti alla Genovese, grilled fish and sun-soaked vegetables to the famous sweet-tart, Tropezienne – all produce is locally sourced from the likes of the nearby Liguria and Nice areas.
